Freezer-friendly Black Beans Quesadillas

- 1 cup cooked black beans (or half of 540ml can)

- 1/2 cup frozen corn kernels

- 1 cup mozzarella cheese (or any other kind)

- 1 tomato, diced

- 1/2 small red onion, diced

- 1 glove garlic, minced

- 1 batch homemade taco seasoning, recipe below (or 2 1/2 tbsp store-bought)

- 6-8 flour tortillas (depending the size and how much filling you want to add)

Taco Seasoning

- 1 tbsp chili powder

- 1 tsp smoked paprika

- 1 tsp cumin

- 1/2 tsp oregano

- 1/2 tsp black pepper

- 1/2 tsp cornstarch

- 1/4 tsp salt

- 1/4 cayenne pepper

1. In a large bowl, add the black beans, corn kernels, cheese, tomato, red onion, garlic and the remaining taco seasoning. Mix everything and set aside.

2. Cook the tortilla, if they are uncooked, for 1 min or until they are soft.

3. To assemble the quesadilla, add about 1/3 cup of the black bean mixture. Fold the tortilla in half and repeat with the rest of the tortillas.

4. At this point, you can freeze them for later. Or if you want to eat them now, pan-fry the quesadilla on each side until is browned and crispy on the outside. Serve with hot sauce, sour cream, salsa, guacamole, etc.
