Mango Ribs

BBQ Mango Ribs

One rack of pork baby back ribs

½ juice of lemon

1 Tbsp light brown sugar

1 Tbsp Dijon mustard

1 Tbsp apple cider vinegar

1 Tbsp low-sodium soy sauce

1⁄2 tsp chili powder

1⁄4 tsp Frank hot sauce

1 mango, diced, for serving

Salt and pepper, pinch

Instructions:

  1. Preheat oven to 300° F.

  2. Remove excess fat from ribs. Peel the silver skin off the back of the ribs - lift with a sharp knife and grab with a paper towel to remove.

  3. Cut ribs apart into individual pieces.

  4. Rub ribs all over with lemon juice.

  5. Mix into brown sugar, Dijon mustard, apple cider vinegar, soy sauce, chili powder and Frank hot sauce.

  6. Coat ribs with the brown sugar mixture. Place meat side down in large baking pan, & cover tightly with foil, shiny side out.

  7. Bake in the oven for 3 hours.

  8. While baking, mix diced mango with salt and pepper. Set aside in the fridge.

  9. Top mango onto ribs before serving.
