Kimchi Fried Rice

Simple yet delicious kimchi fried rice. Use less kimchi, kimchi juice and Gochujang for less spiciness. Enjoy.
Kimchi Fried Rice
½ cup kimchi, chopped
½ cup kimchi juice (juice from kimchi container)
½ tbsp soy sauce
2 tsp sesame oil
2 cups rice, cooked
1 stalk green oinion, chopped
1 egg, sunny side up
1 tbsp Gochujang (optional)
Whisk the kimchi juice, soy sauce and gochujang (if used). Set aside.
Drizzle the sesame oil on the rice and stir to break up any big clumps.
Spray oil in a frying pan. Stir-fry kimchi for about 3 minutes or until is very fragrant.
Add rice and stir-fry for about 1 minute.
Pour in kimchi juice mixture and stir-fry/toss the rice until the rice does not stick together quite as much.
When fried rice is done, add green onion. Top with sunny side up egg.
