Crisp Parmesan Zucchini
1 large medium zucchini, sliced into ¼ inch thick rounds
1 tbsp olive oil or coconut oil (I used coconut oil)
¼ cup Parmesan cheese, grated
¼ cup breadcrumbs
Salt, pinch
Black pepper, pinch
Preheat the oven to 400F. Coat a baking sheet with cooking spray
In a bowl, toss the zucchini with the oil.
In another bowl, combine Parmesan cheese, breadcrumbs, salt and pepper.
Dip and coat zucchini in the Parmesan mixture evenly on both sides.
Place zucchini in a single layer on the prepared baking sheet. Bake for 30 minutes or until brown and crisp
