Mango Lemonade

When life gives you lemons, make (a healthy and delicious twist on) lemonade. For those who know me, I love mango a lot. So here is healthy and delicious Mango lemonade for the summer season. Enjoy.

Mango Lemonade

2 ripe mangos or 2 cups of frozen mango (I used really ripe mangos, give sweeter nectar to help reduce sugar/honey added)

¼ -½ cup of sugar/honey (to taste)

6 cups chilled tap water. I used seltzer water (sparkling mineral water is ok too) for bubbles in my lemonade)

1 cup freshly squeezed lemon juice

1. Cut the meat of the mango off the pit as much as you can (Instruction on how to cut the mango here: http://www.simplyrecipes.com/recipes/how_to_cut_a_mango/) Do the same with the second mango. The pit is the chef’s treat.

2. Put the mango cubes into a blender or food processor. If you are using a blender, add the lemon juice to the mango, as it will be easier to liquidize. Add the sugar to taste. Blend until you have a smooth puree.

3. Transfer the puree to a large jug. Stir in the chilled tap, seltzer or sparkling mineral water and mix well. Serve over ice.
