Pork & Chives dumplings
- 3 tbsp vegetable oil
- 1 lb ground pork
- 1 egg
- 4 cups Chinese chives, chopped finely
- 3 cups carrots, shredded
- 3 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tsp white ground pepper (optional)
- 1 pinch salt
- 1 package round dumpling wrappers
1. In a small pot, heat the oil for about 5-6 mins or until is golden brown in colour. Get of the heat and let it cool down. Set aside.
2. In a large bowl, add the ground pork and egg. Stir and add the rest of ingredients along with the cooled oil. Stir everything.
3. Have a small bowl of water on hand. To assemble the dumplings, spoon about 1 tbsp of this filling onto the center of each dumpling wrapper. Fold the sides of the wrapper. You can pan-fry or boil the dumplings:
Pan-fry: heat 1 tbsp of oil, arrange the dumplings in the skillet, pleated edge up. Cook over medium heat until the bottoms are lightly browned, 2 minutes. Add ¼ cup of water, cover and cook until the filling is cooked through, 5 minutes. Uncover and cook until the bottoms are well browned, 1 minute. Transfer to a plate and serve.
Boil: Add enough water to cover the dumpling. Cook until the filling is cooked through, 10-15 minutes. Transfer to a plate and serve.
