Steam Tilapia
1 whole tilapia, cleaned
2 tbsp fresh ginger, finely julienned
1 tbsp garlic, minced
2 scallions, finely julienned with green and white parts separated
2 tbsp vegetable oil
¼ cup water
¼ cup light soy sauce
Fresh ground white pepper to taste
Optional:
8 sprigs fresh cilantro, roughly chopped
Prepare your steamer setup: I used a large saucepan with a cover and a small round metal elevated rack to put the plate on. Pour the water into the saucepan and turn the heat to medium high.
Place the fish on the plate and into the steamer. Steam for 10 minutes and turn off the heat or until the fish is cooked through (use a butter knife to peek at the meat, the meat should be opaque down to the bone, but the bone should be slightly translucent and not fully cooked)
Carefully pour off all of the liquid accumulated on the plate from steaming and spread half of the ginger, the green portions of the scallion, and the cilantro (if use) over the fish.
Heat 2 tablespoons oil, garlic and the other half of the ginger in a saucepan until the ginger begins to sizzle.
Add the water, soy sauce, and fresh ground white pepper and heat the mixture until simmering.
Once simmering, add white portions of the scallion and cook until the scallion wilts. Spoon the entire mixture evenly over the fish and serve hot!
