Simple Orange Salad

Versatile and you can add any toppings, protein or veggies that you like

- 2 oranges, segmented

- ¼ cup olive oil

- 2 tbsp onion, finely diced

- 1 tbsp apple cider vinegar

- 5-6 cups lettuce or any greens, chopped

- 1 avocado, sliced

- 1 tomato, thinly sliced

- 1/3 cucumber, thinly sliced

- 2 cups cooked chicken or protein of choice, diced

- any other toppings such as seeds, nuts, dried fruits, etc

  1. While segmenting the orange, place a bowl below to catch any orange juice. Squeeze the remains of the orange, it should get about 2 tbsp of orange juice.

  2. Mix orange juice, olive oil, onion, apple cider vinegar, salt and pepper (I add the ingredients into a mason jar and shake it to mix).

  3. Into a salad bowl, add orange, lettuce, avocado, tomato and cucumber. Pour in the orange dressing and mix it into the veggies. Top it off with the chicken and other toppings.
