Egg-Stuffed Baked Potato Boat

4 Baked potatoes, slightly cooled (Baked about 35 minutes)

4 eggs

¼ cup shredded cheese (Cheddar, Swiss, pepperjack, or other of your choice)

Kosher salt and black pepper, pinch

Additional fillings of your choice: vegetables, bacon or ham, etc.

These were the fillings I used:

1 Italian sausage, chopped

¼ cup spinach

¼ cup corn

¼ cup onion, diced

2 tbsp green onion, chopped

Preheat oven to 350 degrees.

  1. Slice a layer off the top of each potato. Use a spoon to gently scoop out insides, leaving a thin layer of potato against the skin and avoiding puncturing the bottom. Reserve scooped potato for another use.

  2. Sprinkle with a little salt and pepper. Sprinkle a layer of shredded cheese into each potato and add fillings as desired (Italian sausage, spinach, corn, onion, etc.) Fill each potato about 3/4 full. Crack one egg into each potato. Sprinkle with a little more cheese and green onion.

  3. Place potatoes on a baking sheet and cook for about 20 minutes. Egg whites should be set and yolks soft.
