I made this healthy and delicious turkey with fruit stuffing over the Christmas holiday. The fruit mixtures infused the turkey with sweetness and spices from inside out, resulting in a very moist and delicious turkey!
Below is the recipe, enjoy. Save leftover breast for turkey sandwiches and left over dark meat and bone for turkey and vegetable soup.
Turkey with fruit stuffing
20 lbs turkey
3 cups of grapes (I used my frozen grapes that I froze a couple weeks ago)
1 large apple, diced
1 medium onion, peeled and diced
½ yellow peppers, diced
½ red peppers, diced
2 medium stalk celery, diced (I didn’t have it)
2 cloves of garlics, minced
1 medium orange, squeezed for juice
2 tsp ground cinnamon
Herb and spices (whatever you want, I used rosemary, thyme and basil)
2 tbsp of soya sauce
2 tsp Worcestershire sauce
1 tbsp apple cider vinegar
1 tbsp olive oil
Salt, pinch
Pepper, pinch
Preheat the oven to 350°F
1. Minced garlic and cut orange in half.
2. Mix minced garlic, ground cinnamon, soya sauce, Worcestershire sauce, apple cider vinegar, olive oil, herb and spices, orange juice, salt and pepper together.
3. Add diced apple, onion, peppers and celery into the mixture. Mix well.
4. Stuff the fruit mixtures into the turkey. Place left over fruits around the turkey.
5. Lightly baste the turkey with left over mixtures. Put the turkey into the oven. Baste the turkey with this left over mixtures every hour.
6. The turkey is done when the temperature with a meat thermometer is 180°F in thigh and 165°F in breast. This turkey was baked for 4 hours.
7. When the turkey is done, remove from the oven and allow to stand for 20 minutes before carving. This allows the juices to redistribute throughout the meat, and makes for easier carving.
