Garlic and Herb Mashed Potatoes

Mashed potatoes can also be healthy too. Here is one tasty, yet healthy garlic and herb mashed potatoes. Enjoy.
Garlic and Herb Mashed Potatoes
3 lbs of potatoes, peeled (any potatoes will do. You can also use sweet potatoes or yam. For added fiber, don’t peel the skin) 4-6 cloves garlic (depends on how much you love garlic) 2 tbsp fresh or dried chives, chopped 1 tbsp fresh or dried thyme, chopped 1 tbsp fresh or dried rosemary, chopped 1 tbsp green onion, chopped 1 tsp olive oil ¾ cup milk ¼ Greek yogurt Salt, pinch Pepper, pinch
1. Place potatoes in a saucepan; add enough water to cover potatoes. Heat to boiling; reduce heat. Simmer uncovered 20 to 30 minutes or until tender; drain. Mash with potato masher or electric mixer on low speed. 2. While potatoes are cooking, wrap garlic, chives, thyme, rosemary, green onion and olive oil with aluminum foil and bake it in the toaster oven for 15 minutes under 350 F. 3. Add milk, yogurt and baked herbs to the mashed potatoes. Beat until smooth and creamy. 4. Season with salt and pepper to taste.
