Vegetable Fried Rice

This is a quick weeknight dinner that uses the simplest ingredients to make a very satisfying meal in no time.

Vegetable Fried Rice

- 2 eggs, slightly beaten

- 3 cloves of garlic, minced

- 1 medium white onion, diced

- 1 ½ cup frozen mixed vegetables (peas, carrots, green beans, corn)

- 3 cups cooked and cooled rice, preferably day old.

- 2 tbsp soy sauce

- 1 tsp oyster sauce (optional, but recommended)

- 1 tsp sesame oil (optional, but recommended)

1. Heat a large pan or wok in a medium-high heat. Add a drizzle of oil to coat the pan. Season the beaten eggs with salt and pepper. Once the pan is heated, add the eggs and scramble them until they are almost set. Remove from the pan and set aside.

2. Add a drizzle of oil and add garlic and diced onions. Sauté them for 1-2 mins until they get caramelized. Add the frozen vegetables and sauté for another 3 mins.

3. Add the scrambled eggs, rice, soy sauce, oyster sauce and sesame oil if using. Combine everything and let it fry for 3-4 mins.

4. Garnish with some chopped green onions, bonito flakes, etc.
