Banana bread muffin

I made a lot of changes to the traditional banana bread recipe, mainly healthier and tastier. Enjoy.

Banana bread muffin

3-4 very ripe banana, peels 1 ½ cups of all-purpose flour 1/3 plain Greek yogurt 1egg 1 tsp vanilla extract 1 tsp baking soda salt, pinch 1 tbsp chia seeds 1 tbsp flax seed ¼ cup nuts (any nuts of your choice, I like almonds) ½ cup sugar (optional for those who want sweeter or you can use 1/3 cup of applesauce)

1. Preheat the oven to 350 F. Spray oil on muffin pan or loaf pan. 2. Mash banana with a fork in a mixing bowl to either completely smooth or small chunk (I like it better with small chunks) 3. Stir in Greek yogurt into the mashed banana 4. Mix in the baking soda, salt, egg, vanilla extract, and sugar/applesauce (if added) 5. Mix in the flour. Mix it well. 6. Mix in chia seed, flax seed and nuts. 7. Pour the batter into your prepared muffin or loaf pan. Bake for 45 minutes to 1 hour at 350F, or until a tester inserted into the center comes out clean. 8. Remove from the oven and cool complete on a rack.
