This is a very easy, healthy and delicious complete meal. You can batch cook by double the amount of the recipe. Now you have a great meal for your week. Enjoy.
A complete, meal – baked chicken and veggies recipe
Set the oven to 350 F
Protein portion of the meal
2 chicken breasts
1 tbsp of soya sauce
1 tbsp of honey mustard
1 tbsp Worcestershire sauce
Pinch of coarse salt and black pepper
Mix all the ingredients onto the chicken.
Marinate the chicken thoroughly in the aluminum-roasting pan and leave it in the fridge.
Starch portion of the meal
4 medium sweet potatoes
Wash and scrub the potatoes. Keep the peels on; they are great source of fiber.
Vegetables portion of the meal
3 medium zucchini
1 lbs of mushroom
1 medium peppers (I used orange peppers)
1 tbsp balsamic vinegar
1 tsp olive oil
Pinch of coarse salt and black pepper
Wash and cut all the vegetables to the desired size and shape
In a small bowl, stir together all the ingredients. Toss the vegetables until they are well coated.
Spread evenly on a roasting pan.
Now you are ready to put everything in the oven.
Take out the chicken from the fridge and put it in the oven. Also put the sweet potatoes in the oven at the same time. Cook for about 30 minutes.
After 30 minutes, put the vegetables in the oven for 20 minutes.
After 50 minutes, your meal is done. Take them out of the oven and portion out your food.
Save leftover for your next meal(s).
