Hungry for curry? try this amazing and relatively easy recipe - chicken curry masala. Enjoy.
Chicken curry masala
1 whole chicken, chopped into pieces
2 eggplants, chopped
2 large onions, chopped
4 small sweet potatoes, peeled and chopped
1 can lentil
1 can coconut
6 cloves garlic, grated or chopped
1 tbsp ginger, grind or finely chopped
2 tbsp Curry Masala for meat (I used the MDH brand)
2 tsp oil
2 – 3 cups water
In a pan, heat oil and fry garlic and ginger for 1 minute. Add onion and fry till light golden.
Then add meat Curry Masala and fry for another 2 minutes.
Add coconut, little quantity at a time. Stir for 3-4 minutes
Add chicken and brown them, turning occasionally on medium heat.
Add 2 cups of water. Cover and simmer on low heat for 30 minutes.
Add sweet potatoes and lentil. Cover and simmer on low heat for 15 minutes. Stir every couple minutes.
Lastly, add eggplants (add more water if required) and cook for 15 minutes.
You can serve this curry with rice, rice noodle or baguette.
