Greek yogurt coleslaw

This coleslaw with Greek yogurt is so easy to make yet so delicious. Once you make it, you won't go back to the traditional (fat-loaded) coleslaw.

Greek Yogurt Coleslaw

- 4-5 cups cabbage, finely shredded

- 1 cup carrots, finely shredded

- ½ cup green onions, thinly sliced

- ½-1 jalapeño, cut in half and thinly sliced (omit if you don’t want the heat)

- ½ cup plain Greek yogurt

- 2 tbsp apple cider vinegar, more or less depending on desired consistency

- 2 tbsp honey (agave syrup or maple syrup works too)

- 1 tsp Dijon mustard

- pinch of salt and pepper

1. In a large bowl, add the cabbage, carrots, green onions and jalapeño. Stir everything and set aside.

2. To make the dressing, mix the Greek yogurt, apple cider vinegar, honey, mustard, salt and pepper.

3. Pour the dressing over the salad and mix everything until all the vegetables are well coated.
