Blueberry Greek Yogurt Pancakes

Blueberry Greek Yogurt Pancakes

- 1 cup blueberries

- 2-3 tsp honey (other sweeteners should work as well)

- 1/2 cup flour

- 1 tsp baking soda

- 6 oz (about 2/3 cup) Greek yogurt

- 1 egg, beaten

1. Add 1/2 of the blueberries and the honey into a small saucepan. Heat the saucepan on low-medium. Stir occasionally until the blueberries have softened and the sauce becomes thick.

2. Meanwhile, stir in the flour and baking soda in a medium bowl. Add the Greek yogurt and egg. Stir until you don't see any flour left. Stir in the remaining 1/2 of the blueberries. Be careful not to overmix. The batter should be quite thick.

3. Heat a pan or griddle on medium high. Spray oil on the surface and spoon the batter. Cook for 2 mins or until some bubble comes up on the top. Flip and cook for another 1-2 min. Continue with the rest of the batter.

4. Stack the pancakes and top it off with the blueberry sauce.
