Heart healthy breakfast omelet

What a great way to start the morning. I was so full! Here is the recipe. Enjoy!
Heart healthy breakfast omelet
3 eggs
2 brown mushrooms, diced
½ medium tomato, diced
¼ onion, diced
¼ pepper (I used orange pepper)
2 tbsp fresh cilantro, chopped
1 tbsp fresh green onion, chopped
1tbsp grated cheese (I used Parmesan)
Salt, pinch
Black pepper, pinch
In a bowl, whisk together eggs, cilantro, green onion, black pepper and salt.
In a skillet, pan fry mushroom, tomato, onion and pepper for 3 minutes. Pour the veggies into a small bowl.
In a skillet, coat the pan with a little bit of oil. Pour in the egg mixture and tilt the pan in a circular motion to spread the egg.
Cook the egg mixture for 3 minutes. Pour the cook veggies onto the center of the egg. Sprinkle cheese on top.
Fold and serve
For a complete breakfast, I had my omelet with ½ avocado, one slice of whole grain toast and fruit parfait (yogurt with apple, blackberry and flax seed). It filled me up for a couple hours.
