Hummus omelet

I wanted to try a new combination of omelet. It is not half bad. I added hummus to my omelet, yep hummus. Lots of great protein to start my day. Here is the recipe. Enjoy!

Hummus omelet

2 eggs

2 brown mushrooms, diced

¼ onion, diced

1 serving of hummus (I bought mine from Costco)

2 tbsp fresh cilantro, chopped

1 tbsp fresh green onion, chopped

1tbsp grated cheese (I used Parmesan)

Salt, pinch

Black pepper, pinch

1. In a bowl, whisk together eggs, cilantro, green onion, black pepper and salt.

2. In a skillet, pan fry mushroom and onion for 3 minutes. Pour the veggies into a small bowl.

3. In a skillet, coat the pan with a little bit of oil. Pour in the egg mixture and tilt the pan in a circular motion to spread the egg.

4. Cook the egg mixture for 3 minutes. Spread hummus evenly on the egg.

5. Pour the cook veggies onto the center of the egg. Sprinkle cheese on top.

6. Fold and serve

For a complete breakfast, I had my omelet with one slice of whole grain toast and fruit parfait (yogurt with kiwi, blackberry and flax seed). It filled me up for a couple hours.
